Kooper’s Straight Rye Whiskey Finished in Cognac Casks is a 7-year-old, single barrel, tasting room–exclusive release that bridges bold American rye with the elegant warmth of French Cognac. Distilled in Indiana, aged in new, charred American white oak, and then finished for 11 weeks in hand-selected French Cognac casks in Texas, it layers Old World fruit and floral character over a structured rye backbone.

Blender Notes

We approach this whiskey by first building a rye blend that can stand on its own, then using Cognac casks more like an instrument than a shortcut. The rye spends time in traditional barrels until its backbone is clear, after which a portion of the blend is moved into Cognac casks and tasted regularly against the control lot. Once the finishing starts to extend the structure instead of masking spice or grain, we recombine the components and allow them to rest together before proofing. The emphasis is always on integration, not novelty.
