This rye began its life in Chicago, distilled by KOVAL, where we selected it specifically for its grain character and early structure. Once in our hands, we barreled it for 9 months in 15 gallon charred oak barrels. in 2016 it was moved to a used Buffalo Trace barrel, where it quietly finished for more than nine years. Through that time, we tracked its progress season by season, tasting for the moment when the barrel, the age, and the Texas climate all came into alignment. The final blend is simply an edit of those long-finished casks—pulled when the whiskey felt complete, not when a calendar said it was done.
