Some people think it’s just dumping whiskey into another barrel and waiting.

It’s not that simple.

At Koopers, finishing is about control.

We choose finishing barrels carefully. Wine. Sherry. Port. Specialty oak. Each one brings something different to the table.

But more isn’t always better.

Timing Is Everything

A finish can take weeks.
It can take months.
Sometimes longer.

Leave it too short, and nothing happens.
Leave it too long, and it takes over.

We taste constantly during finishing. Sometimes every week. Sometimes every few days.

When it hits the right balance, we pull it.

No calendar. No shortcut. Just taste.

That final layer is what turns a good whiskey into a great one.
