We choose finishing barrels carefully. Wine. Sherry. Port. Specialty oak. Each one brings something different to the table.
But more isn’t always better.
A finish can take weeks.
It can take months.
Sometimes longer.
Leave it too short, and nothing happens.
Leave it too long, and it takes over.
We taste constantly during finishing. Sometimes every week. Sometimes every few days.
When it hits the right balance, we pull it.
No calendar. No shortcut. Just taste.
